VIETNAMESE SUMMER TOMATOES

Ingredients

1 1/2lb mixed heirloom tomatoes, sliced

1 English cucumber, peeled, halved lengthwise and sliced

1/2 cup chopped fresh Longo’s Organic Basil

1/4 cup each chopped fresh Longo’s Organic Mint and Cilantro

1/4 cup fish sauce

1/4 cup fresh lime juice

1/4 cup granulated sugar

1/4 cup finely chopped shallots

1/4 cup chopped Longo’s Dry Roasted Salted Peanuts

Directions

Lay tomato slices onto serving platter; set aside.

Gently combine cucumber, basil, mint and cilantro in bowl.

Whisk together fish sauce, lime juice, sugar and shallots in another bowl. Spoon half over sliced tomatoes. Toss remaining with cucumber mixture until well coated.

Spoon over tomato slices. Sprinkle peanuts overtop to serve.

A Dash of Advice

There’s no need to add any extra salt to this dish, as the fish sauce is used as the salt. Lemon juice can be substituted for the lime juice in a pinch.
