STUFFED PORK ROAST WITH SPICED APPLE RUB

Ingredients
1 Longo’s French Pork Rack Stuffed Frisco Style (about 2kg)
2 tbsp Longo’s Country ChurnedSalted Butter, melted
Spiced Apple Rub:
1/2 cup apple chips
1 tbsp granulated sugar
2 tsp Longo’s Curato Coarse Sea Salt
1 tsp each Longo’s Essentials Onion Powder, Ground Cinnamon and Paprika
1/2 tsp each Longo’s EssentialsGarlic Powder, Ground Cumin and Ground Ginger
1/2 tsp dried thyme
Directions
Spiced Apple Rub: Grind apple chips in a spice grinder, high-powered blender or using a mortar and pestle until fine. Mix in sugar, salt, onion powder, cinnamon, paprika, garlic powder, cumin, thyme and ginger until uniformly combined. Transfer to jar and reserve at room temperature for up to 1 month. Makes about 1/3 cup.
Rub pork all over with spice rub. Place on rack in roasting pan or large heatproof skillet. Brush all over with melted butter. Roast in preheated 325°F oven for about 1 1/2 hours or until internal temperature of the meat and stuffing registers 155°F. Rest, tented with Longo’s Essentials Aluminum Foil, for 10 minutes or until internal temperature
