STRAWBERRY MOJITO SALAD

Ingredients

1 tub (142g) Longo’s Organic Spring

Mix or Baby Spinach

1 pkg (340g) fresh Ontario

strawberries, quartered or halved

2 mini cucumbers, halved and sliced

1/2 cup toasted Longo’s Pecan Halves
 

Dressing:
1 to 2 large limes (approx.)

3 tbsp Longo 100% Canola Oil

2 tbsp finely chopped fresh

Longo’s Mint

1 tbsp Longo’s Honey

1/4 tsp each salt and pepper

Directions

Dressing:
Finely grate enough lime zest to measure 2 tsp. Halve lime and juice it to measure 1/4 cup.

Whisk lime juice with oil, mint, honey, salt and pepper.

Set aside.

Toss greens with strawberries, cucumbers and pecans. Drizzle with dressing to your liking.

Serve immediately. (Make-ahead: Salad can be layered in a serving bowl and dressing made ahead to toss just before serving. Reserve dressing in the refrigerator for up to 3 days.)

A Dash of Advice

To get more juice from the lime, heat it in the microwave for 10 to 15 seconds then roll it on the countertop while applying gentle pressure.
