SPICY GRILLED CHICKEN AND TORTELLINI SALAD

Ingredients

1 pkg (350g) Longo’s Cheese Tortellini

1 pkg (450g) Maple Leaf Prime Raised Without Antibiotics Chicken Breast Fillets

1 tbsp Longo’s Vegetable Oil

1 tbsp Longo’s Essentials Italian Seasoning

1 jar (500mL) Longo’s Original Muffuletta Olive Antipasto

1 pkg (200g) mini bocconcini cheese, drained well

2 tbsp lemon juice

3 tbsp chopped fresh Longo’s Basil

Longo’s Curato Parmigiano Reggiano Cheese, shaved

Directions

Cook tortellini in boiling, salted water for about 10 minutes or until tender but firm. Drain well and rinse under cold water. Place in large bowl and refrigerate until ready to use.

In bowl, toss chicken with oil and Italian seasoning. Grill chicken on preheated medium-high grill, turning occasionally, for about 8 minutes or until internal thermometer registers 165°F. Remove to cutting board and slice each fillet into thirds.

Remove tortellini from refrigerator and stir in muffuletta, bocconcini, grilled chicken, lemon juice and basil. Spoon out onto large platter and sprinkle with cheese and more basil, if desired.

A Dash of Advice

Make-ahead: This salad can be made up to 1 day ahead and served cold. Stir well before serving.
