SPICED PORK AND BULGUR

Ingredients

3/4 cup Longo’s Bulgur

4 bone-in pork loin chops (about 700g total)

2 tbsp Longo’s Herb and Garlic Rub

1 can (398mL) Longo’s Organic Black Beans, drained and rinsed

1/2 cup chopped fresh cilantro, divided

Directions

Bring 1 1/2 cups of water and 1/2 tsp of salt to a boil in saucepan. Add bulgur; cover and simmer for 15 minutes.

Meanwhile, toss pork chops with herb and garlic rub and 1 tbsp Longo’s 100% Pure Canola Oil. Place on large baking sheet lined with Longo’s Essentials Parchment Paper. Roast in preheated 400°F oven for 15 minutes or until thermometer registers 150°F.

Meanwhile, fluff bulgur with fork and add beans and 1/3 cup of the cilantro. Divide among plates and serve topped with pork chops and remaining cilantro to garnish.
