SAFFRON POTATOES

Ingredients

1/4 tsp saffron threads

1 1/2 cups warm water

3 large yellow fleshed potatoes (about 2lb), peeled

1/4 cup Longo’s Essentials Country Churned Butter, salted

1/2 tsp salt

1/4 tsp pepper

Directions

Crumble saffron threads into water; set aside.

Cut potatoes crosswise in half and then into 3/4-inch pieces. Pat dry.

Melt butter in large skillet set over medium-high heat. Add potatoes; cook, turning, for about 10 minutes or until browned.

Pour in saffron water, salt and pepper. Bring to a boil. Boil lightly for 5 minutes. Reduce heat and simmer, uncovered, for about 20 minutes or until potatoes are very tender and water is evaporated. Serve immediately.
