POT ROAST BURRITOS

Ingredients

1 pkg (550g) Longo’s Beef Pot Roast

1 can (398mL) Longo’s Organic Black Beans, drained and rinsed

1 can (296mL) red enchilada sauce, divided

4 Longo’s (10 inch) Flour Tortillas

1 cup shredded cheddar cheese

Directions

Remove pot roast from sauce in package and shred meat; place in bowl. Add beans and 1/2 cup of the enchilada sauce; stir to coat.

Lay tortillas on work surface and divide meat mixture in centre of each. Sprinkle with cheese. Fold in sides and roll up.

Lightly spray 11 x 7-inch baking dish with Longo’s Cooking Spray. Place burritos into baking dish and spoon remaining enchilada sauce overtop. Bake in preheated 400°F oven for about 25 minutes or until tortillas are golden and filling is hot.

A Dash of Advice

Heat sauce from pot roast bag, if desired, to serve with burritos.
