PORK AND PEACH SALAD

Ingredients

4 boneless pork loin chops (about 500g)

2 ripe but firm peaches, cut in half

1/2 cup Longo’s Thai Grilling Sauce

1 tub (142g) Longo’s Organic Nordic Blend

1/3 cup Longo’s Balsamic Salad Dressing

Directions

Toss pork chops with 1 tbsp Longo’s Essentials 100% Pure Canola Oil and 1/4 tsp each salt and pepper in bowl.Lightly spray peaches with Longo’s Canola Cooking Spray.Grill peaches on preheated medium-high grill for 3 minutes, cut side down, and then turn over and grill for about 2 minutes more or until golden and tender. Remove to cutting board. Place pork chops on grill and grill for 5 minutes. Turn over and brush with some of the grilling sauce; grill for about 5 minutes more or until thermometer registers 155°F.Slice pork chops into thick slices and toss with remaining grilling sauce.Toss greens with salad dressing and divide among 4 plates. Slice peach halves into wedges and place on top of salad with pork strips to serve.
