OKTOBERFEST SHEET PAN SAUSAGES

Ingredients
1 pkg Schneiders® Oktoberfest® Frozen Dinner Sausages, cut into 1-inch pieces
2 cups broccoli florets
2 cups cauliflower florets
2 cups sweet potato, cut into 1-inch pieces
1 cup red onion, cut into 1-inch pieces
3 cloves garlic, finely chopped
1 tsp rosemary, finely chopped
1 tbsp Italian seasoning
2 tbsp (30 mL) olive oil
3 tbsp Italian parsley, roughly chopped
Salt and pepper to taste
Directions
Preheat oven to 400°F.
Combine broccoli, cauliflower, sweet potato, onions, rosemary, and garlic in a bowl. Drizzle oil over top, season with salt and pepper and toss to coat with oil. Place vegetables on a parchment-lined baking sheet and top with sausages. Bake for 20 minutes, stirring halfway through. Finish with freshly chopped parsley.
