OKTOBERFEST FALL SAUSAGE SKILLET

Ingredients

1 pkg Schneiders® Naturally Hardwood Smoked Oktoberfest® Sausages

3 cups Brussels sprouts, trimmed, halved and blanched for 15 seconds

4 pieces Schneiders® Butcher Cut Double Smoked Bacon, cut into 1-inch pieces

1 medium onion, sliced

3 cloves garlic, finely chopped

1 apple, cored, cut into 1-inch pieces

1 tbsp (15 mL) olive oil

2 tbsp unsalted butter

3 tbsp Italian parsley, coarsely chopped

Zest of 1 lemon finely grated

Directions

Preheat oven to 400°F.

In a medium-sized skillet on medium heat, add oil and bacon and cook until lightly golden. Reserve on a piece of paper towel. Clean the skillet, return to low heat, add butter and onions, and cook until soft and translucent, about 5 minutes. Add garlic and cook for 1 minute.

Add Brussels sprouts, bacon, and apple to the onions and garlic. Stir together and season with salt and pepper. Place in the oven and roast for 10 minutes. Stir, nestle sausages into the vegetables, and roast for 10 more minutes. Finish with freshly grated lemon zest and parsley.
