NONNA ZINA'S CHRISTMAS COOKIES

Ingredients
3 1/2 cups Longo’s Organic Unbleached All Purpose Flour
1 tbsp baking powder
1 envelope baking powder with vanilla (Lievito Vanigliato)
Half a 454g pkg vegetable shortening (such as Crisco)
1 cup granulated sugar
1/4 tsp vanilla extract
2 large Longo’s Enriched Coop Eggs
3 tbsp white vermouth
Directions
Whisk together flour, baking powder, and baking powder with vanilla in large bowl. Add shortening and break up with hands until crumbly. Add sugar and vanilla extract.
Whisk together eggs and vermouth in small bowl. Drizzle over flour mixture and mix together using hands, bringing dough together and kneading until smooth dough forms. Roll out dough on well-floured work surface and, using 3-inch cookie cutters, cut out various holiday shapes. Place on baking sheet lined with Longo’s Essentials Parchment Paper. Bake in preheated 350°F oven for 10 to 15 minutes. Gather unused dough and re-roll and cut out more cookies to bake. Let cookies cool completely.
Icing: Whisk together icing sugar, lemon juice and 2 tbsp of water until smooth, adding more water, if necessary. Spread icing on cookies and add sprinkles to decorate. Let stand until icing is firm.
