MELON MINT GRANITA

Ingredients

4 cups peeled, cubed melon (canary or honeydew)

2 tbsp granulated sugar

1/4 cup fresh Longo’s Mint Leaves

Directions

Combine melon and sugar in saucepan and bring to a simmer over medium heat. Cover and simmer gently for about 3 minutes or until melon is very soft. Let cool completely.

Place melon mixture into blender with mint leaves and pure´e until smooth. Pour into an 8-inch square metal pan and freeze partially for about 1 hour or until edges start to solidify. Use a fork to stir mixture and create “flakes” every hour until completely frozen, about 6 hours.

Enjoy on its own or spoon into tall glasses and top with your favourite sparkling beverage to serve.

A Dash of Advice

To speed up making the granita, put the mixture in an ice cream maker. The texture will be a bit smoother.Variation: For an alcoholic version, add 1/4 cup vodka or rum to the mixture before blending.Timesaver Tip: If you don’t want to use the recipe, pick up Longo’s Signature Lemon Gelato Sorbet or any other great flavour. Let it melt, then pour into a metal pan and freeze. Follow the recipe directions to create a similar granita texture.
