HUMMUS WITH CUCUMBERS, BASIL AND PEANUTS ON A PITA

Ingredients
Peel, halve and dice cucumbers. Place in bowl. Add vinegar, oil, fish sauce and lime juice, stirring until cucumbers are well coated. Stir in salt, pepper and chilies.
Decoratively smear 1/2 of the hummus onto 1 pita. Top with 1/2 of the cucumber mixture. Sprinkle basil and peanuts over top. Repeat with remaining ingredients. Cut into wedges to serve.
VARIATION: Use the cucumber mixture as a filling for pita for a delicious lunch treat.
