GRILLED FRUIT AND PROSCIUTTO PIZZA

Ingredients
1 pkg (700g) Longo’s Pizza Dough
1/4 cup Longo’s Extra Virgin Olive Oil, divided
2 each fresh nectarines and plums Pinch each salt and pepper
1 burrata (250g), drained and at room temperature
1 1/2 cups Longo’s Baby Arugula
1 pkg (125g) Longo’s Curato Prosciutto 1/4 cup fresh Longo’s Basil
Longo’s Curato Balsamic Glaze (optional)
Directions
Preheat grill to medium-high heat.
Cut pizza dough in half and, working on floured surface, roll out each half into a 10-inch circle. Transfer to large baking sheet. Using 3 tbsp of the oil, brush over both sides of dough and place on preheated grill. Grill, turning once, for about 5 minutes or until light golden on both sides and cooked through. Return to baking sheet.
Cut nectarines and plums in half and remove pits. Cut each half into 4 wedges and toss with remaining 1 tbsp oil, salt and pepper. Grill for about 3 minutes or until lightly charred and softened.
Cut burrata in half and smear the inside cream onto each pizza half; break firmer outside of mozzarella into small pieces and scatter on the pizzas. Sprinkle with arugula and top with grilled fruit, prosciutto and basil. Return to grill for about 5 minutes to warm through.
Drizzle with balsamic glaze, if using.
