Ingredients

Green Goddess Sauce:

1/4 cup packed fresh parsley leaves

1/4 cup packed fresh Longo’s Basil

1/4 cup packed fresh Longo’s Mint

2 green onions, chopped

1 clove garlic, minced

1/4 cup plain Greek yogourt

2 tbsp Longo’s Mayonnaise

2 tbsp Longo’s Extra Virgin Olive Oil

1 tsp grated lemon zest

2 tbsp lemon juice

1/2 tsp each salt and pepper

1 pkg (420g) Longo’s Chickpea Veggie Burgers

4 Dempster’s Signature Gold Buns

1 cup Longo’s Baby Arugula

1 small, ripe avocado, pitted and sliced

16 thin cucumber slices

4 Longo’s Provolone Cheese Slices

4 slices tomato

4 slices red onion (optional) 1 cup sprouts (optional)

Directions

Green Goddess Sauce: In small food processor, pulse together parsley, basil, mint, green onions and garlic until coarse. Add yogourt, mayonnaise, oil, lemon zest, lemon juice, salt and pepper; pure´e until smooth. Refrigerate until needed.

Grill veggie burgers on preheated greased grill over medium heat, turning occasionally, for about 12 minutes or until thermometer registers 165°F. Lightly grill buns.

Place burgers on bottom buns and top with Green Goddess Sauce, arugula, avocado, 4 cucumber slices, provolone, tomato, red onion and sprouts, if using. Cover with top bun.
