GOLDEN APPLE CARROT SOUP

Ingredients

2 tbsp Longo’s Mediterranean Extra Virgin Olive Oil

1 onion, chopped

2lb carrots, peeled and sliced

2 Ontario apples such as Honeycrisp or gala, peeled, cored and quartered

2 large cloves garlic, minced

1 tsp each Longo’s Essentials Ground Turmeric and Longo’s Essentials Ground Ginger

1 tsp salt

1/2 tsp Longo’s Essentials Ground Cumin Ground black pepper (to taste)

6 cups Longo’s Essentials Low Sodium Vegetable Broth (approx.)

Longo’s Sour Cream (optional)

Apple-Mint Relish:
1 small Ontario apple, diced

2 tbsp chopped fresh Longo’s Organic Mint

2 tsp each Longo’s Apple Cider Vinegar and Longo’s Pure Maple Syrup

Directions

Apple-Mint Relish: Toss apple with mint, cider vinegar and maple syrup; set aside.

Heat oil in large pot or Dutch oven over medium heat. Add onion; cook for 3 to 5 minutes or until golden. Add carrots and cook for 5 minutes. Add apples, garlic, turmeric, ginger, salt, cumin and pepper. Cook for 2 minutes.

Add broth and bring to a boil. Reduce heat and simmer for 30 to 40 minutes or until carrots are tender. Purée soup using an immersion blender or in batches in a blender (return to pot); adjust consistency with extra broth if needed and simmer gently for 2 to 3 minutes. (Make-ahead: Soup can be stored in jars in the refrigerator for up to 1 week)

Serve soup topped with a dollop of sour cream, if using, and a spoonful of Apple-Mint relish.
