GARLICKY MAYO GRILLED BISON STEAK

Ingredients
4 bison striploin steaks (about 8oz each)
1/2 tsp each salt and pepper (or to taste)
Garlicky Mayo:
1/2 cup Longo’s Mayonnaise
3 large cloves garlic, grated
2 tsp Longo’s Curato Crushed Hot Chili Pepper Spread
2 tsp Worcestershire sauce
1 tsp chopped fresh Longo’s Thyme or Rosemary
1/2 tsp salt
Directions
Garlicky Mayo: Whisk togethermayonnaise, garlic, chili pepper spread, Worcestershire, thyme and salt.Pat steaks dry. Generously spread Garlicky Mayo all over steaks. Let stand at room temperature while grill preheats.Grill steaks for 3 minutes on preheated medium-high grill; rotate steaks a quarter turn and grill for an additional 2 minutes. Flip steaks and grill, rotating midway through, for 3 to 5 additional minutes until thermometer registers 140°F for medium-rare to medium (or continue to cook to preferred doneness). Remove from grill and rest, tented with foil, for 5 minutes. Season with salt and pepper just before serving.Variation: Replace bison steaks with four 1-inch-thick Longo’s CAB striploin grilling steaks (about 7 to 8oz each).
