FIVE HERB ROASTED TURKEY BREAST

Ingredients
3 cloves garlic, minced
1 tbsp chopped fresh Longo’s Rosemary
2 tsp chopped fresh Longo’s Thyme
2 tsp chopped fresh Longo’s Sage
2 tsp Longo’s Essentials Dried Mustard
1 tsp salt and pepper
1 tsp fennel seeds, crushed
2 tbsp Longo’s Extra Virgin Olive Oil
2 tbsp freshly squeezed lemon juice
1 Longo’s Raised Without Antibiotics Grain Fed Boneless Turkey Breast (about 1.5kg)
1 cup dry white wine
Directions
Stir together garlic, rosemary, thyme, sage, dried mustard, salt, pepper, fennel seeds, olive oil and lemon juice in small bowl.
Loosen skin away from meat without detaching. Spread half of paste directly over meat. Cover paste with skin and truss breast if necessary. Spread remaining paste all over surface of breast.
Place turkey breast, skin side up, on rack in 13 x 9-inch roasting pan. Pour wine into pan. Roast in centre of preheated 350°F oven for 1 hour and 15 minutes or until instant read thermometer inserted in thickest part reads 165°F. Tent with foil and let rest at room temperature for 10 minutes. Slice and serve with pan juices.
