FISH TOSTADAS

Ingredients

1 pkg (340g) Longo’s Cod Loins or Haddock Portions, thawed

2 tbsp Longo’s Garlic & Herb or Seafood Rub

4 small corn or flour tortillas

1 pkg (454g) Longo’s Creamy Coleslaw

1 ripe avocado, diced

Directions

Sprinkle both sides of each piece of fish with garlic herb rub.

Heat 1 tbsp Longo’s 100% Canola Oil in large nonstick skillet over medium-high heat. Add corn tortillas, one at a time, and brown on both sides. Remove to plate lined with paper towels.

Return skillet to medium heat and add 1 tbsp Longo’s 100% Canola Oil. Pan-fry fish for about 8 minutes, turning once, until golden and fish flakes easily when tested.

Top each tostada with coleslaw. Divide fish among tostadas and top each with avocado. Sprinkle with pinch each salt and pepper to serve.
