CUCUMBER DILL SALMON SLIDERS AND SALAD

Ingredients

1 English cucumber

2 tomatoes

8 frozen cucumber dill steelhead salmon sliders

1 tub (227g) Longo’s Tzatziki

8 Longo’s Slider Buns

Directions

Finely dice enough of the cucumber to get about 1/2 cup. Chop remaining cucumber into 1 1/2-inch pieces and place in large bowl. Chop tomatoes into similar size pieces and add to bowl. Toss with 1/2 tsp salt and 1/4 tsp pepper; set aside.Lightly spray sliders and grill with Longo’s 100% Canola Cooking Spray. Grill sliders on preheated medium grill for 12 minutes, turning once, or until golden and thermometer reaches 145°F when tested.Top each slider bun with a slider and a teaspoon of tzatziki. Sprinkle with 1 tbsp of diced cucumber and top with remaining half of bun.Stir remaining tzatziki into tomato-cucumber salad until coated well. Serve with sliders.
