CRISPY OYSTER MUSHROOM SLIDERS

Ingredients
5 cups Longo’s 100% Pure Canola Oil or Pure Vegetable Oil
3/4 cup Longo’s Organic All Purpose Flour
2 tbsp Longo’s BBQ Rub
1/2 tsp salt and pepper
3/4 cup water (approx.)
6 oyster mushroom clusters
1 cup Longo’s Panko Bread Crumbs
6 Longo’s Mini Brioche Buns
1/4 cup Longo’s Chipotle Dressing
1 small tomato, sliced
Directions
Heat oil in deep pot until thermometer registers between 350°F and 375°F.
Whisk together flour, BBQ rub, salt and pepper in bowl. Stir in water, adding 1 tbsp more water, if necessary, to create a thick batter.
Dip mushroom clusters into batter, turning to completely coat, then coat each completely in panko crumbs.
Gently drop each cluster, 3 at a time, into the hot oil.
Cook, turning once with tongs, for 4 to 5 minutes or until golden brown. Drain on paper towels. Repeat with remaining mushrooms.
Spread chipotle dressing on one side of buns. Top with tomato slice and then fried mushroom cluster. Top with the other half of buns. Serve warm.
