COCONUT LIME NOODLE SOUP

Ingredients
1 carton (946mL) Longo’s Essentials Vegetable Broth
1 can (400mL) Longo’s Essentials Coconut Milk
1 pkg (500g) frozen Longo’s Asian Style Mixed Vegetable Blend
2 pkgs (85g each) ramen noodles, seasoning packets discarded
1 lime
Directions
Whisk together broth and coconut milk in soup pot and bring to a simmer. Stir in vegetables and ramen noodles. Return to a gentle simmer for about 5 minutes or until vegetables are heated through and noodles are tender. Stir in 3/4 tsp salt and 1/4 tsp pepper.
Rasp or finely grate 1/2 tsp lime zest and stir into soup. Cut lime in half and squeeze juice from half the lime into soup. Cut remaining lime half into 4 wedges.
Use tongs to divide noodles and vegetables among bowls. Ladle broth overtop
