CACTUS PEAR CHRISTMAS MOJITO

Ingredients
1 cactus pear
10 leaves fresh Longo’s Mint
1/4 tsp granulated sugar
Ice
1 tbsp fresh lime juice
1/4 cup cranberry, blueberry, pomegranate juice mix
3 cranberries
Directions
Cut peel off cactus pear and cut into chunks. Place in small food processor and purée until smooth. Press through a fine strainer to remove seeds; set juice aside.
Place fresh mint and sugar into rock glass and muddle (mash) until mint is fragrant. Add ice to glass along with cactus pear juice, lime juice and cranberry juice mix; stir to combine.
Skewer cranberries onto a small skewer or toothpick to garnish drink and enjoy.
