BRIOCHE CRANBERRY APPLE STUFFING

Ingredients

1/4 cup Longo’s Country Churned Unsalted Butter

2 large onions, diced

2 ribs celery, thinly sliced

1 tbsp chopped fresh Longo’s Organic Thyme

2 apples (such as Honey Crisp or Royal Gala), peeled, cored and cut into cubes

1 orange, zested

1 cup Longo’s Dried Cranberries

1 loaf (500g) sliced brioche (about 16 slices), cubed

1/4 cup chopped fresh parsley

2 tbsp chopped fresh Longo’s Organic Sage

3/4 tsp each salt and pepper

1 1/2 cups Longo’s Essentials Chicken or Vegetable Broth

Directions

Melt butter in large non-stick skillet over medium heat. Add onions, celery and thyme. Cook, stirring, for 3 minutes or until softened; remove from heat.Stir together apple, orange zest, cranberries and brioche in large bowl. Add onion mixture to bowl along with parsley, sage, salt and pepper; stir to combine. Pour in broth, stirring gently until entire mixture is moistened.Transfer mixture to a 12-cup casserole dish. Cover with Longo’s Essentials Aluminum Foil and bake in centre of preheated 350°F oven for 30 minutes. Remove foil; bake for 30 minutes more or until golden.
