APPLE CHEDDAR SPROUTS SLAW

Ingredients

1 lb Brussels sprouts or 1 pkg (400g) Longo’s Halved Brussels Sprouts

1 large red apple, diced

1 cup grated old white cheddar cheese

1/2 cup Longo’s Dried Cranberries

1/2 cup Longo’s Chopped Pecans or slivered almonds, toasted (optional)

Directions

Halve sprouts (if needed); slice halved sprouts crosswise into a coarse shred. Combine with apple, cheese, cranberries and pecans, if using.

Dressing: Whisk vinegar with shallot, mustard, maple syrup, horseradish, saltand pepper; whisk in oil until combined. Toss the sprout mixture with dressing to combine.

A Dash of Advice

If making ahead, choose an Ontario red apple that is less likely to brown, such as Empire, Courtland, Ambrosia or Gala.
