ANNIVERSARY GRILLED SIRLOIN WITH PEPPERCORN MUSHROOM SAUCE

Ingredients
2 Certified Angus Beef® top sirloin cap or medallion steaks, about 1-inch thick
1/2 tsp each salt and pepper
Peppercorn Mushroom Sauce:
2 tbsp Longo’s Essentials Country Churned Butter, Salted
1 pkg (227g) Longo’s Sliced Mushrooms
Pinch salt
1/4 cup brandy
3/4 cup Longo’s Beef Broth
1/2 cup 35% whipping cream
1 tsp Longo’s Peppercorns, crushed
Directions
Sprinkle steaks all over with salt and pepper; set aside.
Peppercorn Mushroom Sauce:
Melt butter in skillet over medium-high heat.
Add mushrooms and salt; sauté for about 6 minutes or until golden brown.
Add brandy and stir until evaporated.
Stir in broth, cream and peppercorns; bring to a simmer. Continue to simmer stirring often, for about 5 minutes or until thickened slightly. Remove from heat and keep warm.
Preheat grill to medium-high heat. Lightly spray grill with Longo’s 100% Canola Cooking Spray. Grill steaks, turning a couple of times, for about 8 minutes or until thermometer registers 140° F for medium rare. Remove to cutting board and let rest for a couple of minutes.
Thinly slice steaks and spoon Peppercorn Mushroom Sauce overtop to serve.
