Ingredients

4 Longo’s Centre Cut Fresh Atlantic Salmon Fillets, skin on (about 500 to 700g total)1 tbsp Longo’s Country Churned Salted Butter, melted1 tsp Longo’s Essentials 100%Canola Oil1/4 tsp salt (approx.)Lemon wedgesSavoury Sugar Rub:2 tbsp packed light brown sugar1 tsp each Longo’s Essentials Paprika and Ground Mustard1/2 tsp each Longo’s Essentials Garlic Powder and Salt1/4 tsp Longo’s Essentials Dried Thyme

Directions

Savoury Sugar Rub: Blend sugar with paprika, mustard, garlic powder, salt and thyme; reserve.

Preheat broiler to High and arrange rack in second-highest position. Preheat cast iron skillet over medium heat for 5 minutes.

Meanwhile, brush salmon filletswith melted butter and coat tops with a thin, even layer of Savoury Sugar Rub.

Add oil to skillet, using a brush to distribute evenly. Sprinkle salt evenly into skillet.

Carefully place fillets in skillet, skin-side down. Cook for 5 minutes.

Carefully transfer skillet to arranged rack in oven; broil for 5 to 7 minutes or until tops are caramelized and salmon has a hint of coral in the centre when tested with a knife.

Serve with lemon wedges to squeeze overtop.

Tips: Replace the spices and herbs in the sugar rub with 2 tsp of Longo’s Seafood Rub.

If you don’t own a cast iron skillet, use a stainless steel skillet; stainless steel will heat more quickly and hotter than cast iron, so reduce the stovetop cooking to 4 minutes.
