Ingredients
2 very ripe avocados
1/4 cup unsweetened cocoa powder
1/4 cup Longo’s Pure Maple Syrup (approx.)
1 tsp vanilla extract
Pinch salt
2 tbsp water (or as needed)
1 pkg (300g) Longo's Fresh Cut Fruit such as berry bowls, sliced kiwi or mango slices, divided
1 cup Longo’s Maple Almond Granola or Coconut Hemp Granola, divided
Directions
Halve and pit avocados; scoop flesh into a mini food processor or blender. Add cocoa, maple syrup, vanilla and salt. Blend, adding water as needed, until mixture forms a smooth pudding consistency. Adjust sweetness with additional maple syrup to taste.
Layer pudding with fruit and granola between 4 serving bowls, glasses or jars. Serve immediately or refrigerate for up to 4 hours before serving.
(Make-ahead: Parfaits can be made ahead and reserved separately in the refrigerator overnight.)
