CURRIED CARROT, APPLE & ALMOND CRUMBLE

Ingredients

2 tbsp Longo’s Essentials 100% Pure Canola Oil or Longo’s Mediterranean Extra Virgin Olive Oil

1 large onion, chopped

2 large carrots, peeled and cut into uniform chunks

1 can (540mL) Longo’s Chickpeas, drained and rinsed

2 Ontario Honeycrisp or gala apples, peeled and chopped

1 small red pepper, cubed

2 large cloves garlic, minced

2 tsp Longo’s Essentials Curry Powder

1 tsp each Longo’s Essentials Ground Cumin and Salt

1 1/2 cups Longo’s Essentials Low Sodium Vegetable Broth

2 tbsp cornstarch

2 tbsp each chopped fresh Longo's Organic Cilantro or parsley

2 tbsp Longo’s Apple Cider Vinegar

Crumble:

1 cup Longo’s Organic Rolled Oats

1 cup Longo’s Blanched Almond Meal

1/3 cup Longo’s Slivered Almonds

2 tbsp brown sugar

1/3 cup Longo’s Essentials 100% Pure Canola Oil or Longo’s Mediterranean Extra Virgin Olive Oil

Directions

Crumble: Stir oats with almond meal, slivered almonds and brown sugar; blend in oil until crumbly. Set aside.Heat oil in large, ovenproof skillet over medium heat. Add onion and carrots; cook for 8 to 10 minutes or until golden. Add chickpeas, apples, red pepper, garlic, curry powder, cumin and salt; cook, stirring often, for 3 to 4 minutes.Whisk vegetable broth with cornstarch; stir into skillet and bring to a boil. Remove from heat; stir in cilantro and vinegar.Sprinkle crumble mixture evenly overtop (alternatively can assemble and bake in 11 x 7-inch casserole dish instead of skillet). (Make-ahead: Refrigerate for up to 2 days. Start in a cold oven and start timer once oven has preheated.)Bake in preheated 375°F oven for 30 minutes or until topping is golden and filling is bubbling. Let stand for 10 minutes before serving.
