AVOCADO SHRIMP SALAD

Ingredients

2 tbsp Longo’s Essentials 100%

Pure Canola Oil

1 pkg (454g) Longo’s Extra Jumbo

Raw Black Tiger Shrimp (16/20),

peeled and deveined

1 tsp smoked paprika

1 clove garlic, minced

1/2 tsp lime zest

6 cups chopped romaine hearts

1 pkg (255g) Longo’s

Seriously Sweet Tomatoes

1 avocado, thinly sliced

1/4 cup coarsely chopped red onion

Creamy Avocado Dressing:

1 avocado, diced

1/4 cup Longo’s Sour Cream

2 tbsp Longo’s Mayonnaise

1 tbsp lime juice

1 tbsp Longo’s Essentials 100%

Pure Canola Oil

1/2 tsp salt

Directions

Creamy Avocado Dressing:

Combine avocado, sour cream, mayonnaise, lime juice, oil and salt in mini food chopper or blender and purée until smooth; set aside.

Heat oil in large skillet over medium high heat. Add shrimp, paprika, garlic and lime zest. Cook, stirring, for about 5 minutes or until shrimp are cooked through. Remove from heat.

Spread lettuce onto platter and top with tomatoes, avocado and red onion. Top with shrimp and serve

Creamy Avocado Dressing alongside.

A Dash of Advice

Use ripe but firm avocados for the recipe for the best flavour and colour. Choose firm avocados a few days ahead of using them, so they ripen perfectly at home.
